Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn, fresh or frozen
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine quinoa, black beans, corn, bell pepper, avocado, and cilantro.
  7. Add lime juice and season with salt and pepper.
  8. Toss gently and serve.
