A gluten-free version of the classic buckeye candy, combining creamy peanut butter and chocolate.

- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/4 cup gluten-free graham cracker crumbs
- 1/2 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons coconut oil
Instructions
- In a bowl, mix peanut butter, powdered sugar, graham cracker crumbs, and vanilla until smooth.
- Roll the mixture into small balls and place on a baking sheet.
- Chill in the refrigerator for 30 minutes.
- In a microwave, melt chocolate chips and coconut oil until smooth.
- Dip each peanut butter ball in chocolate, covering it completely.
- Return to the baking sheet and chill until set.
