Delicious gingerbread pancakes for a festive breakfast.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
Instructions
- In a bowl, mix the flour, brown sugar, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, whisk together buttermilk, egg, and melted butter.
- Combine wet and dry ingredients until just mixed.
- Heat a skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form, then flip and cook until golden brown.
- Serve warm with maple syrup.
Notes
- Adjust spices to your taste.
- For fluffier pancakes, do not overmix the batter.
- Store leftover pancakes in an airtight container in the fridge.
