A crunchy and flavorful granola infused with gingerbread spices.
Ingredients

- 3 cups rolled oats
- 1 cup nuts (walnuts, almonds, or pecans)
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup dried fruit (raisins or cranberries)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix oats, nuts, ginger, cinnamon, nutmeg, and salt.
- In a small saucepan, warm honey and coconut oil until melted.
- Pour the honey mixture over the dry ingredients and stir until well coated.
- Spread the mixture evenly on a baking sheet.
- Bake for 20-25 minutes, stirring halfway through.
- Remove from oven and let cool.
- Add dried fruit and mix well.
- Store in an airtight container.
Notes
- Adjust spices to taste.
- Can substitute nuts with seeds for a nut-free version.
- Store in a cool, dry place.
