Ingredients

- 2 lbs ground venison
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup beef broth
Instructions
- In a large pot, brown the ground venison over medium heat.
- Add the onion, garlic, and bell pepper. Cook until softened.
- Stir in the chili powder, cumin, and paprika. Cook for 1 minute.
- Add the crushed tomatoes, kidney beans, beef broth, salt, and pepper.
- Bring the chili to a boil, then reduce heat and simmer for at least 30 minutes.
- Serve hot, garnished with your choice of toppings.
Notes
- Adjust spices according to your taste.
- Chili can be made a day in advance for better flavor.
- Top with cheese, sour cream, or jalapeños if desired.
