Ingredients

- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine quinoa, black beans, corn, bell pepper, avocado, and cherry tomatoes.
- Add cilantro, lime juice, cumin, salt, and pepper.
- Toss gently to combine all ingredients.
- Serve immediately or chill in the fridge for 30 minutes before serving.

- This dish can be made a day in advance.
