Ingredients

  • 1/2 cup chopped celery
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup dairy-free mayonnaise

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Spread the chickpeas on a baking sheet and roast for 20 minutes.
  4. In a separate bowl, combine celery, bell pepper, green onions, and dairy-free mayonnaise.
  5. Once the chickpeas are roasted, let them cool and then mix with the vegetables.
  6. Serve chilled or at room temperature.
