Ingredients

- 2 cups cooked chickpeas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped celery
- 1/2 cup diced bell pepper
- 1/4 cup chopped green onions
- 1/4 cup dairy-free mayonnaise
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Spread the chickpeas on a baking sheet and roast for 20 minutes.
- In a separate bowl, combine celery, bell pepper, green onions, and dairy-free mayonnaise.
- Once the chickpeas are roasted, let them cool and then mix with the vegetables.
- Serve chilled or at room temperature.
