Description

A perfect brunch for game day gatherings with friends and family.


Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 1 pound sausage, cooked and crumbled
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 package of tortillas
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together eggs and milk.
  3. Add cheese, sausage, bell pepper, onion, salt, and pepper to the egg mixture.
  4. Grease a baking dish and layer tortillas on the bottom.
  5. Pour the egg mixture over the tortillas.
  6. Bake for 30-35 minutes or until the eggs are set.
  7. Let it cool for a few minutes before slicing.
