A delicious dessert made with coconut and a creamy frosting.
Ingredients

- 2 cups shredded coconut
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1 package yellow cake mix
- 3 eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the cake mix, eggs, and milk until combined.
- Pour the batter into a greased cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- In another bowl, beat the butter and powdered sugar until creamy.
- Add vanilla extract and mix well.
- Frost the cooled cake with the creamy mixture.
- Press shredded coconut onto the frosting.
- Slice and serve.
Notes
- Store in the refrigerator.
- Can use sweetened or unsweetened coconut.
- Adjust sweetness by adding more or less powdered sugar.
