- 2 lobster tails
- 1 cup all-purpose flour
- 1 cup breadcrumbs
- 2 eggs
- 1 cup buttermilk
- Salt to taste
- Pepper to taste
- Oil for frying
Instructions
- Preheat the oil in a deep fryer to 350°F (175°C).
- Prepare the lobster tails by cutting them in half lengthwise.
- In a bowl, mix flour, salt, and pepper.
- In another bowl, beat the eggs and mix with buttermilk.
- Dredge the lobster tails in the flour mixture, dip into the egg mixture, then coat with breadcrumbs.
- Carefully place the lobster tails in the hot oil.
- Fry until golden brown, about 4-5 minutes.
- Remove and drain on paper towels.
Notes
- Use fresh lobster tails for best flavor.
- Check for doneness; lobster should be opaque.
- Serve with lemon wedges.
