- 2 lobster tails
- 1 cup flour
- 1 cup cornmeal
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 corn tortillas
- 1 cup shredded cabbage
- 1 avocado, sliced
- 1 lime, cut into wedges
Instructions
- Prepare the lobster by boiling it for 5 minutes, then cool and remove the meat from the shell.
- In a bowl, mix flour, cornmeal, paprika, garlic powder, salt, and pepper.
- In another bowl, whisk eggs and buttermilk together.
- Dip lobster meat in the egg mixture, then coat with the flour mixture.
- Heat oil in a pan over medium heat.
- Fry lobster pieces until golden brown, about 3-4 minutes per side.
- Warm corn tortillas in a dry skillet.
- Assemble tacos with fried lobster, cabbage, and avocado.
- Serve with lime wedges.
