Ingredients
- Fresh black-eyed peas – 1 pound
- Water – enough to cover peas
Instructions
- Wash the black-eyed peas thoroughly under running water.
- In a pot, bring water to a boil.
- Add the peas to the boiling water.
- Blanch the peas for 2-3 minutes.
- Remove the peas and transfer them to an ice bath to stop cooking.
- Drain the peas and dry them with a towel.
- Place the peas in freezer bags, removing excess air.
- Label the bags with the date and freeze.
