Instructions
- In a large bowl, combine quinoa, black beans, corn, red bell pepper, and avocado.
- In a separate bowl, mix lime juice, cumin, and salt.
- Pour the dressing over the quinoa mixture and toss gently.
- Add cilantro and mix well.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
