Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup black beans, rinsed
- 1 cup corn, drained
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 1/4 cup cilantro, chopped
- Salt to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, combine quinoa, black beans, corn, bell pepper, avocado, lime juice, and cilantro.
- Add salt to taste.
- Mix well and serve chilled or at room temperature.
