Ingredients

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine quinoa, black beans, corn, bell pepper, avocado, lime juice, and cilantro.
  7. Add salt to taste.
  8. Mix well and serve chilled or at room temperature.
