Ingredients

- 1 pound ground beef
- 1 can (15 ounces) black beans, drained
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 2 cups cooked rice
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat.
- Add black beans, corn, diced tomatoes, cooked rice, taco seasoning, salt, and pepper. Stir well.
- Transfer the mixture to a baking dish.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes until bubbly.
Notes
- You can add jalapeños for extra spice.
- Use leftover chicken or turkey instead of beef if preferred.
