- 1 pound ground beef
- 1 cup chopped onion
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 2 cups diced tomatoes
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 bag tortilla chips
Instructions
- In a skillet, cook ground beef and onion over medium heat until beef is browned.
- Add black beans, corn, diced tomatoes, and taco seasoning to the skillet.
- Stir and simmer for 10 minutes.
- In a baking dish, layer tortilla chips, beef mixture, and cheese.
- Bake at 350°F for 15 minutes until cheese is melted.
- Serve hot and enjoy with your favorite toppings.
Notes
- Feel free to add jalapeños for heat.
- Top with sour cream or guacamole if desired.
- Can be made ahead and reheated.
