Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 cup chopped vegetables (bell peppers, carrots, broccoli)
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes or until water is absorbed.
- In a skillet, heat olive oil over medium heat.
- Add vegetables, salt, and pepper.
- Sauté for 5-7 minutes until tender.
- Fluff quinoa with a fork and mix with vegetables.

- Use any vegetables you prefer.
- Great for meal prep.
- Can be served warm or cold.
