Description
A simple and tasty Hoppin’ John recipe made with black-eyed peas and rice.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 cup long-grain rice
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, bell pepper, and garlic. Sauté until soft.
- Add soaked peas, water, salt, black pepper, cayenne, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add rice to the mixture and stir well.
- Cover and cook for an additional 20 minutes or until rice is tender.
- Remove bay leaf before serving.
Notes
- For extra flavor, add cooked sausage or ham.
- Serve with cornbread for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
