Description

Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf
  • 2 tablespoons olive oil

Instructions

  1. Rinse the black-eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, bell pepper, and garlic. Sauté until soft.
  4. Add soaked peas, water, salt, black pepper, cayenne, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Add rice to the mixture and stir well.
  7. Cover and cook for an additional 20 minutes or until rice is tender.
  8. Remove bay leaf before serving.

Notes

  • For extra flavor, add cooked sausage or ham.
  • Serve with cornbread for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
