A simple recipe for cooking black-eyed peas.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- Optional: 1 ham hock or smoked sausage for flavor
Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, combine black-eyed peas, water, onion, garlic, salt, pepper, and bay leaf.
- If using, add ham hock or smoked sausage.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for about 1 to 1.5 hours until peas are tender.
- Remove bay leaf and meat if used. Serve hot.
Notes
- Soaking peas overnight can reduce cooking time.
- Add more water if needed during cooking.
- Serve with rice or cornbread.
