A simple recipe for cooking black-eyed peas.

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and remove any debris.
- Soak the peas in water overnight or for at least 6 hours.
- In a pot, combine soaked peas, fresh water, onion, garlic, salt, pepper, and bay leaf.
- Bring to a boil over medium heat.
- Reduce heat and simmer for 30-45 minutes until tender.
- Remove bay leaf and serve hot.
Notes
- You can add ham or bacon for extra flavor.
- Adjust seasoning to your taste.
- Store leftovers in the refrigerator for up to 3 days.
