Ingredients

  • 2 lbs beef stew meat, cut into cubes
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in the Dutch oven over medium heat.
  2. Add the beef and brown on all sides.
  3. Remove the beef and set aside.
  4. Add onions and garlic; sauté until soft.
  5. Add carrots and potatoes; stir to combine.
  6. Return beef to the pot.
  7. Add beef broth, salt, pepper, thyme, and bay leaf.
  8. Bring to a boil, then reduce heat to low.
  9. Cover and simmer for 1.5 to 2 hours until meat is tender.
