A delicious and easy recipe for a hearty stew cooked in a Dutch oven.
Ingredients

- 2 lbs beef stew meat, cut into cubes
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in the Dutch oven over medium heat.
- Add the beef and brown on all sides.
- Remove the beef and set aside.
- Add onions and garlic; sauté until soft.
- Add carrots and potatoes; stir to combine.
- Return beef to the pot.
- Add beef broth, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours until meat is tender.
Notes
- Serve with crusty bread.
- You can add other vegetables like peas or green beans.
- Leftovers can be stored in the refrigerator for up to 3 days.
