Ingredients

- 1 cup dry black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- Optional: 1 carrot, diced
Instructions
- Rinse the black eyed peas under cold water.
- In a large pot, combine the peas, water, onion, garlic, salt, pepper, and bay leaf.
- Bring to a boil over medium heat.
- Reduce heat and simmer for 1-1.5 hours or until peas are tender.
- Add diced carrot in the last 15 minutes if using.
- Remove bay leaf before serving.
Notes
- Soaking peas overnight can reduce cooking time.
- Adjust seasonings to taste.
- Store leftovers in the refrigerator for up to 3 days.
