Description
A simple dish made with dry black-eyed peas.
Ingredients

- 1 cup dry black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas and soak them overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add the black-eyed peas and water.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add salt and pepper, stir well.
- Cook for an additional 10 minutes.
- Serve warm.

- Soaking reduces cooking time.
- Adjust seasoning to taste.
- Can add ham or bacon for extra flavor.
