Ingredients

- 1 cup black-eyed peas
- 2 cups water
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon paprika
- Oil for frying
Instructions
- Soak black-eyed peas in water overnight.
- Drain and rinse peas.
- In a bowl, mix flour, salt, and paprika.
- Add soaked peas to the flour mixture and coat evenly.
- Heat oil in a deep pan over medium heat.
- Fry the coated peas in batches until golden brown.
- Remove and drain on paper towels.
- Serve warm.
