Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup chopped bell peppers
- 1 cup corn
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a separate pan, sauté bell peppers and corn until tender.
- Mix in black beans and cumin. Cook for 5 minutes.
- Combine quinoa with the vegetable mixture.
- Season with salt and garnish with cilantro.
