A hearty and nutritious chili recipe suitable for the Daniel Fast.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper, carrots, and celery, cook for 5 minutes.
- Stir in diced tomatoes, kidney beans, black beans, and vegetable broth.
- Add chili powder, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot and enjoy.
Notes
- Adjust spices to your taste.
- Can be stored in the refrigerator for up to 3 days.
- Add more vegetables if desired.
