Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add bell pepper, carrots, and celery, cook for 5 minutes.
  4. Stir in diced tomatoes, kidney beans, black beans, and vegetable broth.
  5. Add chili powder, cumin, oregano, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Serve hot and enjoy.
