Healthy breakfast muffins suitable for the Daniel Fast.
Ingredients

- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup maple syrup
- 1/2 cup unsweetened applesauce
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 cup mixed berries
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut flour, baking powder, baking soda, and salt.
- In another bowl, combine maple syrup, applesauce, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix well.
- Fold in the mixed berries.
- Line a muffin tin with liners and fill each cup with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container.
- Can be frozen for later use.
- Substitute berries with your choice of fruits.
