Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup mixed berries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut flour, baking powder, baking soda, and salt.
  3. In another bowl, combine maple syrup, applesauce, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix well.
  5. Fold in the mixed berries.
  6. Line a muffin tin with liners and fill each cup with the batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
