Ingredients

- 1 cup cashews, soaked
- 1/2 cup nutritional yeast
- 1/4 cup lemon juice
- 2 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup olives, sliced
- 1/4 cup fresh basil, chopped
Instructions
- Soak the cashews in water for 4 hours, then drain.
- In a blender, combine cashews, nutritional yeast, lemon juice, garlic, salt, smoked paprika, and cayenne pepper. Blend until smooth.
- Transfer the mixture to a bowl and fold in cherry tomatoes, olives, and basil.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve with vegetable sticks or crackers.
