Ingredients

  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori seaweed
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/2 pound raw fish (like salmon or tuna) or cooked shrimp
  • Soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot; bring to a boil, then reduce heat and cover.
  3. Cook for 20 minutes; remove from heat and let sit for 10 minutes.
  4. Mix rice vinegar, sugar, and salt in a bowl until dissolved.
  5. Stir the vinegar mixture into the cooked rice; let cool.
  6. Lay a sheet of nori on a bamboo mat; spread a thin layer of rice over it.
  7. Add avocado, cucumber, carrot, and fish on top of the rice.
  8. Roll the sushi tightly using the mat; slice into pieces.
  9. Serve with soy sauce.
