- 2 lobsters, cooked and cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tablespoons curry powder
- 1 can coconut milk
- 1 cup vegetable broth
- 1 tablespoon oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Stir in curry powder and cook for 1 minute.
- Add lobster pieces and mix well.
- Pour in coconut milk and vegetable broth. Bring to a simmer.
- Cook for 10 minutes, allowing flavors to meld.
- Season with salt.
- Garnish with fresh cilantro before serving.
