- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup crushed crisp rice cereal
- 2 cups chocolate chips
- 2 tablespoons coconut oil
Instructions
- In a bowl, mix peanut butter, powdered sugar, and vanilla until smooth.
- Stir in crushed rice cereal until well combined.
- Shape the mixture into small balls and place them on a baking sheet.
- Freeze for 30 minutes until firm.
- Melt chocolate chips and coconut oil together in a microwave.
- Dip each ball into the chocolate, covering completely.
- Return to the baking sheet and let the chocolate set.
Notes
- Store in an airtight container.
- These can be made ahead of time.
- Try using dark chocolate for a richer flavor.
