Ingredients

- 4 cups fresh broccoli florets
- 1 cup shredded carrots
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Add broccoli, carrots, onion, garlic, vegetable broth, salt, pepper, and nutmeg to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
- Blend the soup until smooth using an immersion blender.
- Stir in the heavy cream and cheddar cheese until melted and combined.
- Serve hot and enjoy.

- For a thicker soup, blend more thoroughly.
