Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 1 can diced tomatoes
- 2 teaspoons Creole seasoning
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a pot, combine soaked peas and water. Bring to a boil.
- Add onion, garlic, bell pepper, celery, diced tomatoes, and Creole seasoning.
- Add bay leaf and season with salt and pepper.
- Reduce heat, cover, and simmer for about 1 hour until peas are tender.
- Remove bay leaf before serving.
Notes
- Use fresh herbs for added flavor.
- Serve with rice or cornbread.
- Adjust the spiciness by modifying the amount of Creole seasoning.
