Ingredients

  • 2 lobsters (1.5 lbs each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Cook lobsters in boiling water for 8-10 minutes. Remove and cool.
  2. Extract the meat from the lobsters and chop it into small pieces.
  3. In a pot, melt butter and sauté onions, carrots, celery, and garlic until soft.
  4. Add tomato paste, thyme, and seafood stock. Simmer for 30 minutes.
  5. Blend the soup until smooth and return to heat.
  6. Add white wine and heavy cream, mixing well.
  7. Stir in lobster meat and heat through.
  8. Season with salt and pepper to taste.

Notes

  • Use fresh lobsters for the best flavor.
  • Adjust the thickness by adding more or less cream.
  • Serve with crusty bread for dipping.
