A rich and creamy lobster bisque that delights the palate.
Ingredients

- 2 lobsters (1.5 lbs each)
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Cook lobsters in boiling water for 8-10 minutes. Remove and cool.
- Extract the meat from the lobsters and chop it into small pieces.
- In a pot, melt butter and sauté onions, carrots, celery, and garlic until soft.
- Add tomato paste, thyme, and seafood stock. Simmer for 30 minutes.
- Blend the soup until smooth and return to heat.
- Add white wine and heavy cream, mixing well.
- Stir in lobster meat and heat through.
- Season with salt and pepper to taste.
Notes
- Use fresh lobsters for the best flavor.
- Adjust the thickness by adding more or less cream.
- Serve with crusty bread for dipping.
