Ingredients

- 1 cup black-eyed peas, soaked
- 4 cups vegetable broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup coconut milk
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
Instructions
- Drain and rinse the soaked black-eyed peas.
- In a pot, sauté the onion and garlic until soft.
- Add the black-eyed peas and vegetable broth.
- Bring to a boil, then reduce heat and simmer until peas are tender.
- Stir in coconut milk, cumin, salt, and pepper.
- Cook for an additional 10 minutes.
- Serve warm.
