- 2 lbs collard greens, cleaned and chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Stir in collard greens and cook for 2-3 minutes.
- Pour in vegetable broth and season with salt, pepper, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Adjust seasoning to taste and serve hot.
