Instructions
- In a bowl, mix peanut butter, shredded coconut, powdered sugar, and vanilla extract until smooth.
- Shape the mixture into small balls and place them on a baking sheet.
- Chill the balls in the refrigerator for 30 minutes.
- Melt chocolate chips and coconut oil in a microwave or double boiler.
- Dip each ball into the melted chocolate, covering it completely.
- Return the chocolate-covered balls to the baking sheet.
- Chill again until the chocolate sets.
