A delicious ciabatta chicken pesto sandwich packed with flavor.
Ingredients

- 2 ciabatta rolls
- 1 cup cooked chicken, shredded
- 1/4 cup pesto sauce
- 1/2 cup fresh mozzarella, sliced
- 1/2 cup cherry tomatoes, halved
- 1 cup arugula
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the ciabatta rolls in half.
- Mix the shredded chicken with pesto sauce.
- Spread the chicken mixture onto the bottom half of each ciabatta roll.
- Layer with mozzarella slices, cherry tomatoes, and arugula.
- Place the top half of the rolls on the sandwich.
- Wrap the sandwiches in foil and place in the oven for 10 minutes.
- Remove from the oven, unwrap, and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or spinach.
- Try using grilled chicken for extra flavor.
