Ingredients
- Brussels sprouts – 500g
- Carrots – 300g
- Parsnips – 300g
- Green beans – 200g
- Olive oil – 3 tbsp

- Lemon juice – 1 tbsp
Instructions
- Preheat your oven to 200°C (400°F).
- Clean and trim all vegetables.
- Chop Brussels sprouts in half and cut carrots and parsnips into sticks.
- In a large bowl, mix vegetables with olive oil, salt, pepper, and minced garlic.
- Spread vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender and slightly caramelized.
- Add lemon juice and fresh thyme before serving.
