Ingredients

  • 1/4 cup of walnuts, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine Brussels sprouts and carrots.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Toss to coat evenly.
  5. Spread the vegetables on a baking sheet.
  6. Roast for 20-25 minutes until tender.
  7. Remove from oven and drizzle with balsamic vinegar.
  8. Add cranberries and walnuts, then toss gently.
  9. Serve warm.
