Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dried cranberries
  • 1/2 cup chopped nuts
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar.
  3. Add eggs, milk, and vanilla extract. Mix well.
  4. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  6. Fold in cranberries and nuts.
  7. Fill muffin tins with batter about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

  • Store in an airtight container for up to a week.
  • Can substitute cranberries with raisins or chocolate chips.
  • For extra flavor, add orange zest.
