Instructions
- Preheat the oven to 325°F (160°C).
- Mix chocolate cookie crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and mix well.
- Add eggs one at a time, mixing after each addition.
- Stir in sour cream and peppermint extract until combined.
- Fold in chocolate chips gently.
- Pour the filling over the crust in the pan.
- Bake for 50-60 minutes or until set.
- Let cool, then refrigerate for at least 4 hours.
- Top with whipped cream and crushed candy canes before serving.
