Chocolate espresso thumbprint cookies are rich and flavorful treats with a coffee twist.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp espresso powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chocolate ganache for filling
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together butter and sugar.
- Add flour, cocoa powder, espresso powder, and salt. Mix until combined.
- Stir in vanilla extract.
- Shape the dough into small balls and place them on a baking sheet.
- Make an indentation in the center of each ball.
- Bake for 12-15 minutes.
- Allow cookies to cool, then fill the centers with chocolate ganache.
Notes
- Store in an airtight container.
- Use dark chocolate for a richer flavor.
- Adjust espresso powder to taste.
