A healthy and delicious chickpea salad wrap that is easy to make.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- 1/4 cup diced red onion
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 large lettuce leaves or wraps
Instructions
- In a bowl, mash the chickpeas with a fork.
- Add cucumber, tomato, red onion, mayonnaise, lemon juice, salt, and pepper.
- Mix until well combined.
- Spoon the chickpea mixture onto lettuce leaves or wraps.
- Roll the leaves or wraps tightly.
- Serve immediately or refrigerate for later.
