Description
A comforting chicken pot pie served with delicious red lobster biscuits.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 1/4 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp thyme
- 1 pie crust
- 2 cups shredded cheddar cheese
- 1/2 cup butter
- 2 cups all-purpose flour (for biscuits)
- 1 tbsp baking powder
- 1/2 tsp salt (for biscuits)
- 1/2 cup buttermilk
- 1/2 cup shredded cheddar cheese (for biscuits)
- 1/4 cup garlic butter (for biscuits)
Instructions
- Preheat oven to 400°F (200°C).
- In a large pot, sauté onions, carrots, celery, and potatoes for 5 minutes.
- Add chicken, peas, and chicken broth. Simmer for 10 minutes.
- Stir in heavy cream, flour, salt, pepper, and thyme. Cook until thickened.
- Pour mixture into a pie crust in a baking dish.
- Cover with another pie crust and cut slits for steam.
- Bake for 30-35 minutes until golden brown.
- For biscuits, mix flour, baking powder, and salt in a bowl.
- Add buttermilk and cheese. Mix until combined.
- Scoop onto a baking sheet and brush with garlic butter.
- Bake biscuits for 15-20 minutes until golden.
Notes
- Use leftover chicken for quicker preparation.
- Feel free to add your favorite vegetables.
- Serve biscuits warm with extra garlic butter.
