  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1 pie crust
  • 2 cups shredded cheddar cheese
  • 1/2 cup butter
  • 2 cups all-purpose flour (for biscuits)
  • 1 tbsp baking powder
  • 1/2 tsp salt (for biscuits)
  • 1/2 cup buttermilk
  • 1/2 cup shredded cheddar cheese (for biscuits)
  • 1/4 cup garlic butter (for biscuits)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large pot, sauté onions, carrots, celery, and potatoes for 5 minutes.
  3. Add chicken, peas, and chicken broth. Simmer for 10 minutes.
  4. Stir in heavy cream, flour, salt, pepper, and thyme. Cook until thickened.
  5. Pour mixture into a pie crust in a baking dish.
  6. Cover with another pie crust and cut slits for steam.
  7. Bake for 30-35 minutes until golden brown.
  8. For biscuits, mix flour, baking powder, and salt in a bowl.
  9. Add buttermilk and cheese. Mix until combined.
  10. Scoop onto a baking sheet and brush with garlic butter.
  11. Bake biscuits for 15-20 minutes until golden.
