Ingredients

- 1 lb chicken, diced
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 cup celery, chopped
- 3 cloves garlic, minced
- 1/4 cup flour
- 3 cups chicken broth
- 2 tbsp tomato paste
- 2 tbsp Cajun seasoning
- 1 bay leaf
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a large pot, heat oil over medium heat.
- Add flour to make a roux, stirring constantly until brown.
- Add onion, bell pepper, celery, and garlic. Cook until softened.
- Add chicken and cook until no longer pink.
- Stir in chicken broth, tomato paste, Cajun seasoning, and bay leaf.
- Simmer for about 30 minutes.
- Season with salt and pepper.
- Serve over cooked rice.
Notes
- Adjust spice level according to your preference.
- Can add shrimp for additional flavor.
- Store leftovers in the refrigerator for up to 3 days.
