Description

Ingredients

  • 2 tbsp Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add flour to make a roux, stirring constantly until brown.
  3. Add onion, bell pepper, celery, and garlic. Cook until softened.
  4. Add chicken and cook until no longer pink.
  5. Stir in chicken broth, tomato paste, Cajun seasoning, and bay leaf.
  6. Simmer for about 30 minutes.
  7. Season with salt and pepper.
  8. Serve over cooked rice.
