A creamy cheesecake topped with a sweet berry compote.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup sugar (for compote)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, 1/2 cup sugar, and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until set.
- Cool completely, then refrigerate for at least 4 hours.
- For the compote, combine mixed berries, 1/4 cup sugar, and lemon juice in a pot.
- Cook over medium heat until berries break down and the mixture thickens.
- Let the compote cool before serving over the cheesecake.
Notes
- Make sure cream cheese is at room temperature for easy mixing.
- Adjust sugar in the compote based on berry sweetness.
