Description

A method for preserving hoppin’ john through canning.


Ingredients

Scale
  • 2 cups black-eyed peas
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 2 bay leaves
  • 1 cup cooked ham, diced (optional)

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse peas.
  3. In a pot, sauté onions, bell peppers, and garlic.
  4. Add peas, broth, salt, black pepper, cayenne, and bay leaves.
  5. Bring to a boil, then simmer for 1 hour.
  6. Add ham if using and cook for another 10 minutes.
  7. Prepare canning jars and lids.
  8. Fill jars with hoppin’ john mixture leaving 1-inch headspace.
  9. Seal jars and process in a pressure canner for recommended time.

Notes

  • Adjust seasoning to taste.
  • Store canned jars in a cool, dark place.
  • Use within one year for best quality.
