A simple and tasty recipe for southern-style canned black eyed peas.

- 2 cans black eyed peas, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegetable broth
- 1 tablespoon apple cider vinegar
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until soft.
- Stir in minced garlic and cook for 1 minute.
- Add black eyed peas, smoked paprika, salt, and pepper.
- Pour in vegetable broth and bring to a simmer.
- Cook for 10 minutes, stirring occasionally.
- Add apple cider vinegar and stir well.
- Serve warm.
