A simple recipe for a quick and tasty dish using canned black-eyed peas.
Ingredients

- 2 cans of black-eyed peas, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup diced tomatoes
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and sauté for 1 minute.
- Add black-eyed peas, cumin, salt, and pepper. Stir well.
- Cook for 5 minutes, stirring occasionally.
- Add diced tomatoes and lemon juice. Stir and cook for another 5 minutes.
- Remove from heat and serve warm.
Notes
- You can add chopped bell peppers for extra flavor.
- This dish pairs well with rice or cornbread.
- Store leftovers in the fridge for up to 3 days.
