Ingredients

  • 1 onion, diced

  • 1 cup diced tomatoes
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and sauté for 1 minute.
  4. Add black-eyed peas, cumin, salt, and pepper. Stir well.
  5. Cook for 5 minutes, stirring occasionally.
  6. Add diced tomatoes and lemon juice. Stir and cook for another 5 minutes.
  7. Remove from heat and serve warm.
